I stayed in the Cordial for 2 nights in July and really enjoyed it. Its 2 minutes walk from the edge of the new town, 10 mins to the river and 15 mins to the centre of the old town...all this is dwnhill but it's a gentle hill with lots of pokey shops to explore on the way back up so nothing strenuous.
The breakfast was ok - nothing special but there was plenty of choice and a nice outdoor terrace to eat on if you get down early enough or are lucky enough to snap up a table as some one's leaving.
My room was spacious and clean and although it was hot and there was no air con, they did provide a fan as standard (i.e. didn't have to ask for it).
I was on my own (female) and felt perfectly safe in Salzburg at all times...and in the hotel for that matter. I noticed there were quite a few other solo travellers which was nice as a) I'm not the only one and b) there are plenty of people to talk to.
Tip: Look out for a small court yard on the right hand side of the sthopping street as you walk from the hotel to the river. There's a lovely little wine bar in there which is quiet but clean and the staff are very friendly.
2nd Tip: If you are getting the train up to the fortress do so early - it can get very busy andthere is little shade to queue in.
Languages are not a problem - most people spoke good English.
Overall, a great place for a weekend break!!
